Yummy Mountain Fried Possum

Yummy Mountain Fried Possum

1 young Possum
1 egg yolk
1/2 cup milk
1 tsp. salt
1/2 cup flour
3 tbsp. fat

After skinning, soak Possum in salt water overnight, then drain and cut into pieces. (Be sure to remove Possum's innards) Parboil meat pieces for 20 minutes. Drain and wipe with a damp cloth. Make a batter of egg yolk, milk, salt, and flour. Dip meat pieces into batter and brown in hot fat. Reduce heat, cover and cook slowly for 1 1/2 hours, turning a few times. Serves 2 to 4.

Enjoy!

When I was a child my father bagged a possum and my mother cooked it for him with sweet potatoes. To my sister and me, the creature looked like a giant rat and we refused to take a bite. However, being country reared, we ate all sorts of game. Just not the possum.

Thank you for visiting our blog. Granny Ann and I welcome visitors and welcome their input whether in agreement or disagreement. It is good to explore all sides of an issue. Please come again.

YUM! Can't wait to try this recipe. Seriously, did grandson and husband take them to the swamp and let them out yet?

Thanks for visiting my blog - and now I visited yours - and will definitely come back again. I've never eaten fried possum (nor do I plan to!) but I have eaten groundhog. Don't plan to again, though.
I like your having a Bible verse on your banner.
